meal for one (not low fat!)


I tried to think of food that I like, that others don't like,
that was easy to fix,
and came up empty.
So when I went shopping 
I just grabbed a few things that sounded good at the time:
a package of bacon, a sweet potato, and a $2.78 butternut squash.
Oh - and 2 pints of icecream :-)  coffee and coconut macaroon
(which I shared with Brandon and Tyler after they got home) 

For 3 of my 6 meals while the family was away, I had the same exact thing - bacon and cheese.

Pre-heat oven to 400 degrees
Arrange 4 slices of bacon on a baking sheet with sides.
Bake for 15 ish minutes; no need to flip bacon midway through cooking.
When the bacon is to your liking, remove it.
Using your same pan,
sprinkle a generous handful of shredded monterey jack cheese on the bacon grease and any bits of bacon that stuck to the pan
and pop it back in the oven for about 4-6 minutes, until cheese is bubbly and beginning to brown around the edges.
Eat it right out of the pan.
Scrumptious, I tell you. Scrumptious.

  1. boy oh boy, thats my kind of meal! maybe thats why we are "roundish" ? love me some melted cheese and bacon!! everyone else can have the breads, pasta and rice, give me the cheese and bacon please! :)
